Vitamin C also helps in the proper production of collagen to ensure the proper functioning of blood vessels, bones, cartilage, gums, skin and teeth. The presence of this vitamin is also essential for normal energy metabolism. Vitamin C helps in the proper functioning of the nervous system, maintaining normal psychological functions and contributes to reducing feelings of fatigue and tiredness. Acting as a cofactor, it increases the absorption of iron, which is particularly important for those following a plant-based diet, since non-heme iron from plant sources has a lower absorption efficiency compared to iron of animal origin.
